From the deserts of Mexico to the heart of Dallas. A story of resilience, tradition, and culinary mastery.
Born in Matehuala, a small city in the high desert of San Luis Potosí, Fino Rodriguez learned the foundations of flavor from his grandmothers—both revered caterers—and his father, a local taquero whose reputation was built on decades of dedication.
Driven by an unyielding dream, he made an eight-day trek through the desert to reach the United States. He arrived in Dallas with nothing but his heritage, his hands, and an iron will. Starting as a dishwasher, he climbed through the ranks of Dallas's most respected kitchens.
Where tradition meets innovation. Where the humble taco becomes art.
Fino's philosophy is one of elevation. He takes the humble components of Mexican street food—nixtamalized corn, dried chilies, fresh seafood—and treats them with the precision and reverence of haute cuisine.
Grilled red snapper, crisp Mexican coleslaw, jalapeño ranch, queso asadero. A study in coastal memory.
A complex melt of artisanal cheeses, enriched with slow-cooked brisket and fresh spinach.
Never pre-made. Crafted fresh daily with hand-selected chilies and aromatics.
A modest window in West Dallas becomes an overnight sensation. D Magazine calls it "a truly special taco place."
